Coborn’s Market & Table: A Fresh Chapter in Plymouth
When Roers Companies announced The Boulevard development in Plymouth, MN, the vision was clear: create a vibrant community where residents could live, gather, and connect. A cornerstone of that vision is the addition of Coborn’s Market & Table, a flagship grocery concept that combines innovation, community, and tradition under one roof. Recently, we had the opportunity to connect with the Coborn’s team to learn more about their vision for this location, the unique experiences it will bring, and why this partnership is such an exciting milestone for both companies and the Plymouth community.
The Boulevard is being developed through a partnership between Roers Companies and Scannell Properties, transforming the former 75-acre Prudential corporate campus into a dynamic mixed-use destination featuring medical office, business campus, grocery-anchored retail, restaurants, and multifamily living.

Inspired by Innovation and Community
Coborn’s decision to join this development wasn’t just about expansion — it was about opportunity. Together, Roers Cos. and Coborn’s will shape spaces where residents, businesses, and communities can flourish together.
“We were inspired to join this project in Plymouth because of the unique opportunities it presented. The Boulevard is a truly groundbreaking development, and we’re excited that our flagship store, Coborn’s Market & Table, reflects that same spirit of innovation and possibility,” the Coborn’s team shared.
With deep roots in Minnesota, Coborn’s saw Plymouth as the perfect place to explore new approaches, differentiate for the future, and — most importantly — become part of a thriving community.
Growth Rooted in Legacy
As Coborn’s celebrates more than 100 years in business, this store represents both continuity and bold innovation. This location will be the seventy-nineth grocery location, expanding a footprint near Coborn’s home base in St. Cloud while marking their debut in the Twin Cities market. This flagship store positions Coborn’s to differentiate themselves from other grocers while serving as an incubator to test and refine new ideas. What Coborn’s learns in Plymouth will guide future store designs and offerings, shaping the company’s long-term growth strategy. For Roers Cos., this type of forward-thinking partnership reinforces our commitment to building developments that stand the test of time — both as lasting community assets and as smart, sustainable investments.
A Partnership Reimagining Community
The collaboration between Roers Cos. and Coborn’s goes beyond a standard commercial relationship. When thoughtfully designed housing and vibrant retail come together, entire communities thrive.
“What excites us most about this collaboration with Roers Companies is the strategic partnership and the new opportunities it brings. Together we’re reimagining what’s possible when residential and retail come together in a single development.”
This model creates not only memorable resident experiences but also enduring value for investors.
A Community Hub, Not Just a Store
Roers Cos. is proud to curate communities where residents have immediate access to not just housing, but to experiences and amenities that enrich their lives. Plymouth residents can expect an elevated shopping experience that leans into the vision of Coborn’s Market & Table serving as a community hub. The store will feature food court-style dining with in-store sampling and community events, as well as a celebration of Minnesota food culture with a wide selection of locally and regionally made products. Shoppers will also enjoy a premium Wine & Spirits store offering local favorites, specialty items, and a modern atmosphere. Convenience is built in through online ordering, curbside pick-up, and delivery options, while the MORE Rewards program provides personalized discounts and fuel savings.
The Plymouth location will introduce unique experiences not found in other Coborn’s stores:
– A “grocerant” concept, blending grocery shopping with restaurant-style dining.
– Indoor and outdoor seating, plus an outdoor stage for community performances and gatherings.
– Sustainability initiatives like recycled-plastic shopping carts, energy-efficient refrigeration, and expanded recycling programs.
– Technology-driven convenience through seamless online-to-in-store shopping options.
The Numbers Behind the Development
Spanning more than 60,000 square feet, Coborn’s Market & Table will include bakery, meat, deli, frozen, dairy, floral, and dining options. Its adjacent 9,000-square-foot Wine & Spirits store will enhance the customer experience even further. The impact extends to employment as well. This location will create approximately 200 jobs. As an employee-owned, family-run company, Coborn’s is committed to providing competitive wages, comprehensive benefits, and meaningful career growth opportunities in a supportive, community-focused environment. For investors, this means more than just a grocery anchor — it represents long-term stability, community draw, and economic vitality.

Giving Back to Plymouth
Coborn’s is bringing its tradition of community giving to Plymouth, mirroring Roers Cos.’ mission to strengthen the communities where we build, ensuring our developments create lasting impact for residents, neighbors, and investors alike. Residents can look forward to:
– Fundraising partnerships supporting local food shelves, United Way, Folds of Honor, and more.
– Family-friendly events, tasting stations, and performances on the outdoor stage.
– Art integrated into the building exterior design that celebrates food, community and Minnesota’s seasons.
Through these initiatives, every fundraising dollar raised will flow directly back into the Plymouth community, reinforcing Coborn’s long-standing commitment to strengthening the places they serve.
Looking Ahead
Set to open in March 2026, Coborn’s Market & Table represents a new chapter for both the company and the community.
“We’re thrilled to be part of the Plymouth community and look forward to serving its residents. We can’t wait to connect with guests, offer fresh and local products, and create a space where the community can gather, shop, and enjoy unique experiences.”
Roers Cos. is proud to bring partners like Coborn’s into our developments — partners who share our vision of building places where people love to live, connect, and invest. The Boulevard will stand as a testament to how thoughtful design and strong partnerships can create not only thriving communities, but also long-term value for those who believe in our mission.
As we continue to expand our portfolio of innovative, mixed-use communities, we look forward to creating more opportunities for our residents, partners, and investors to be part of what’s next.
